Braised tofu fish chunks with ginger and scallion

Wild-Caught Tofu Fish

Sold out

A small wild-caught fish that takes its name from flesh as soft as silken tofu. It has no scales and almost no fine bones, so it needs only a quick clean before it goes into the pan.

In the pack

  • 2 kg, flash-frozen at sea shortly after landing
  • Scaleless body, gutted and ready to rinse and cook
  • Very few fine bones, with a soft, boneless centre

Taste and texture

Delicate, moist and almost custard-soft when cooked, with a mild sweetness that takes on ginger, scallion and soy beautifully.

How to cook

Braise with ginger, scallion and soy sauce, pan-fry gently until golden on both sides, or simmer into a light clear soup. Keep the heat moderate and the time short, as the soft flesh falls apart easily.

Storage

Keep frozen at -18°C. Thaw in the refrigerator and cook immediately once defrosted. Do not refreeze.
